Lazy night dinner

Man, it sure has been a long time! This year is going by faster than I can keep track of. Just a quick post before My husband and I sit down to dinner. I wasn't in a cooking kind of mood tonight. I just wanted to have something quick and easy, so here's what I did.

Melt 2 tbsp butter and 2 tbsp EVOO in a pan over med heat. Once melted, add in half a lb of cubed stew meat. Throw in some onion powder, minced garlic, Worcestershire sauce, salt, pepper, and season salt. Allow to brown. Throw in some sliced red and yellow peppers and some cubed hash browns. Allow to cook through (about 10 mins). Add some milk and flour to make a gravy. When thickened, serve on top of bread or toast for an open faced delight!

Taco Tuesday

I came up with this quick and easy dinner the other night. It's great for a night when you get home late or just don't feel like dirtying a bunch of cookware. I was in the mood for tacos, but did not feel like going through the whole process (not that it's a very long one) of cooking the meat. Anyway, all I did was mix a packet of taco seasoning with about a pound of ground beef (90/10). I rolled it into a ball and flattened to form a burger patty. Cooked it up in a pan for about 10 minutes, and prepared my "buns." We used soft taco tortillas and put all of our taco toppings on the wrappers ( mine just had sour cream and cheese, my husband had sour cream, cheese, and bean and cheese dip). Place the burger in the tortilla and enjoy! This dinner was a big hit and the burgers were so juicy. I will definitely be making these again!

Graduation Celebration

Hey guys! Happy New Year. I know I have been slacking with posts but one of my New Year's Resolutions is to blog more, so here we go! Let's start with some news that makes me extremely happy: I am a graduate!!! I finished up all of my requirements at the beginning of December (yay me!). Now that I have graduated, I hope to have a little more time to devote to other aspects of my life, including this blog. Now, lets get on with it!

I found a recipe for an amazing brownie, worthy of a (graduation) celebration! It is pure, gooey deliciousness!! I hear nothing but rave reviews when I make it.

You will need the following:

1 box Milk Chocolate cake mix (or your favorite chocolate cake mix)
1 cup of Evaporated Milk
10 oz of soft caramels
2 cups semi-sweet chocolate chips

Preheat the oven to 350. First, mix the cake mix and 2/3 cup evaporated milk. The batter will be VERY thick. In an ungreased 9x13 pan, spread half of the batter. This will be sticky, so to keep the batter off of my hands, I spray my fingers with a little bit of cooking spray. Bake for 15 minutes. While this is baking, combine the rest of the evaporated milk and the caramels in a pan over low heat. Stir continuously until the caramels have melted completely. Once batter is finished, remove from oven and allow to cool on a wire cooling rack. After about 5 minutes, cover with the chocolate chips. Drizzle the caramel mixture over top and drop the remainder batter by heaping spoonfuls on top. Bake for another 25 minutes or until toothpick inserted in center comes out without batter. Allow to cool, and enjoy!
